Of late, Singapore’s weather has gotten more stuffy than ever. The solution? Surprisingly, it might just be soup. Located at 18 Pahang Street (near Aliwal Arts Centre), No Milk Fish Soup and Bistro has recently opened its doors to the public to serve up clear fish broth to the world.
Packed with 27 years worth of Teochew-style heritage and goodness, this isn’t any old coffeeshop corner; visitors will immediately be able to suss it out from the neon welcome sign on its window outside, welcoming one and all to try all of the rich, decadent food available on the menu. The fish soup served up at No Milk is deceptively clear and full-bodied, finely balanced with a generous garnish of Japanese Nori in place of seaweed. Priced from $6, the soup is crafted by No Milk chef Hoe Gern, and serves up two types of fish: mackerel and sea bass, and diners also have the option of adding on some side dishes, such as the Black Char Siu and Grilled Pork Belly.
It’s not all fish on the menu though – No Milk also delivers signature spicy fragrant egg noodles, handmade daily and perfect for the mala fan. Served with a hearty amount of grilled fish or pork belly, the dish is drizzled in homemade mala chilli sauce, bringing you comfort food when you need it most. Also in the works is a concept seafood store soon to be integrated into the restaurant.
On the second floor of No Milk, enter The Rooftop Bistro, open only from 5.30pm to 12 midnight, and come discover a whole new world of tipples and bar cuisine, ranging from Mexican, Italian and local fusion cuisine. Check out the tequila-marinated angus beef or freshly made tagliatelle, as well as local fusion favourites such as the Beef Rendang Pasta, comprising tender beef stewed for 12-hours and the Red Curry Pasta served with fried ebi marinated both inside and out. Cocktails are reasonably priced too, ranging from S$10 – S$20, while there are daily discounts from 1 for 1 glasses to 15% off bottles to Korean soju deals.
